Churn

The churn stood in the cool of the dairy, its dasher worn smooth by hands older than Nyra. The girl gripped the handle and began to work it up and down, and the cream inside answered with a thick, sloshing patience. “It will not hurry,” Nyra said. “A churn keeps its own time, and the only way through is to keep going.”

For a long while nothing seemed to change. The girl’s arms grew tired and her rhythm faltered. “I cannot tell if it is working,” she said. “The cream looks the same as when we began.” Nyra set a hand over hers and steadied the stroke. “It is always working,” she answered. “The change is gathering where you cannot see it yet.”

Then, between one lift and the next, the sound shifted. The slosh thickened into a heavier, broken knocking, and small golden flecks began to cling to the dasher. “There,” Nyra said. “Listen. The churn is telling you before your eyes can.”

They poured off the buttermilk and gathered the pale gold into a bowl, pressing out the last bright beads of liquid. The girl turned the soft mass over, amazed that so much plain turning had made a thing so firm and new. “Could a book have taught me this?” she asked.

Nyra wiped the dasher clean and set it to dry. “A book could tell you cream becomes butter,” she said. “It could give you the words churn and dasher and the count of the minutes. But it cannot put the ache in your arms or teach your ear the moment the sound breaks. Some keeping lives only in the doing. The page points, and the hands arrive.”
